With family roots in South Louisiana, I can't let the day pass with out at least a mention of a favorite holiday. One of the best things about going to Mardi Gras (besides the people) is the food! There's something amazing about the food from Cajun Country, but "heart healthy" is probably never used in a description relating to the traditional recipes that are available.

Most people are familiar with the traditional festivities that personify Mardi Gras in New Orleans, but the Cajun celebrations offer a unique look at the traditions that started it all.

A staple that is available throughout the carnival season and beyond is jambalaya. There are even festivals where local "Chefs" compete for the title of "Jambalaya King!" Needless to say, this is a popular dish and a favorite of visitors to the Bayou State.

In honor of Mardi Gras, I found a great link to a Jambalaya recipe that is not only delicious, but calorie conscious as well. At just 304 calories per serving, this is a great way to celebrate the season while watching the calories. This just proves that you can still eat those things you love while watching what you eat. And for those who are really motivated, plan a trip to Mamou next year and you can burn off a few calories as you chase a chicken for the gumbo pot!  Enjoy and "Laissez les bon temps rouler!
